At Poulet Bonne Femme, we’ve always believed that great food begins at the source. That’s why, since day one, we’ve only ever used true free-range, higher welfare Irish chicken – sourced from trusted farmers that Sara and Gav know personally and visit regularly. These relationships mean everything to us. We know exactly how our chickens are raised, how they’re cared for, and what they eat. This kind of provenance isn’t just a buzzword for us – it’s the heart of everything we do.
Our chicken is more than delicious. It’s food you can feel good about eating. Free-range, higher welfare chicken is naturally leaner, packed with flavour, and rich in nutrients like protein, iron, zinc and B vitamins – all essential for a healthy, balanced diet.
But the truth is, chicken alone doesn’t make a Poulet Bonne Femme rotisserie. Ours is prepared the only way we know how: in-house, by hand, with a secret herb marinade that’s been perfected over 15 years. Inspired by an old French recipe, we marinate each chicken overnight in salt, herbs and cracked black pepper to deeply season the meat and lock in flavour.
And when it comes to cooking, we don’t cut corners. Unlike other rotisseries who batch-cook chickens early in the day and keep them warm in bags, we do things differently. We have a dedicated rotisserie team who tend to the spit all day long, adding birds in small batches and checking each one for temperature, colour and texture. Every single chicken is removed at the exact right moment – when it’s juicy, golden, and full of flavour. It’s why our takeaway chickens and sandwich fillings are always fresh, never dried out or overcooked.
This level of care takes time, patience and skill – but it’s how we’ve always done it, and why our customers come back week after week.

Of course, others may come along,but we know that real quality and real heart can’t be copied. We’ve been doing this long before rotisserie was trendy. And while others might sell something similar, no one else has our chicken, our marinade, our people - or our love.
